Insanity folks, pure insanity.

I did a few errands Friday morning before I hit the sack and traffic was insane. Insane as in people blocking intersections, cutting each other off and just the general road rage. If people rode bikes like they drive cars-there would be a whole lot of people wearing casts and slings.

Just totally insane.

Then I went to work and it was pretty much the same.

As soon as I turn all the equipment on and especially the donut fryer and it's like moths to a flame because I smell up the entire store. I have people waiting for donuts hot out of the fryer sometimes. It's almost like I am a crack dealer.

Pretty much non-stop customers until 2 or 3 o'clock in the morning.

I felt for the single lone cashier that was working last night-I don't think she had time to take a breath.

I don't think I ever had 8 hours go by so fast. The problem is that besides making 200 dozen donuts, I make pies, rolls, breads, muffins, pastries and bagels. And I am usually making 3 or 4 things all at the same time.

It gets kinda busy. Ever see one of those cooking shows where they make a whole meal in 30 minutes? It's just like that only I'm making mass quantities of product.

Whatever, the holiday is here and I'm gonna enjoy it:-)

BTW, how much of a pain in the ass would it be to make bagels at home? Sesame bagels that is. Is it do-able or too much BS and just easier to keep buying them from the local bagel shop here?

I like one every now and then with some sprouts and hummus.

Mmmm, to make bagels at home would be possible.........

Do you have a fairly heavy duty mixer with a dough hook? You'll need a very developed dough. It should be developed enough that you can stretch it thin enough to see through.

The only part that would be difficult is controlling the temps and humidity levels when you are proofing them.

Other then that,all you need is a pot of boiling water and a fairly hot oven.

Try it, the worst thing that'll happen is that you just have chewy half cooked lumps of dough:-)

Hi, Good Morning and Merry Christmas, I could never get behind Intelligent Design, or God for that matter. I have had the good sense to know that those who do believe provide a needed structure for the fabric of our society.

Dancing between the structure of the Believers and the mayhem of the heathens has worked for me. I give respect to both and they return same. It's America, we can live as we see fit. Respect has been the key.

I guess from an early age I thought evolution made sense. Then I read this last March and again the other day...

It's bloody long, but it disproves evolution to me. Read it sometime when you have a long break. Today might be good while the kids are spazzing out on gifts and sugar.
